Iingredients
2 avocados
½ cup small red onion, diced
2 tbsp jalapeno, brunoise
¼ cup cilantro, medium chopped
2-3 tsp salt, kosher
1 tbsp lime juice
1 tsp Guajillo

Cut and seed the avocados. Spoon and score the flesh in the peel. Scoop out the flesh into mixing bowl. Add the remaining ingredients in order. Mix all with the spoon while pressing often with the back of the spoon against the sides of the bowl to mash the avocado and incorporate all the ingredients well. Finished product should remain slightly chunky.
