Best Homemade Chai
» 1 cup whole milk or “barista” non-dairy milk (can half with water)
» 1 tbsp cane sugar or honey, to taste
» 1 tsp Assam loose-leaf black tea
» ¼ – ½ tsp chai masala
Chai Masala
» 90 g black peppercorns
» 60 g dried cut ginger or ginger powder
» 25 g cinnamon powder or chips
» 25 g whole green cardamom
» 3 g cloves
» 3 g nutmeg powder
» 2 g fennel seeds

Combine the masala spices in a spice grinder and grind to a medium coarse powder. There can still be bits of cardamom skins and peppercorns floating around.
In a small saucepan, combine all of the chai ingredients over medium heat. Heat until the milk steams off and small bubbles appear around the edge of the pan. Then, stir to keep the bottom from scalding. When it reaches a boil, remove from the heat and stir well. Steep for up to 5 minutes. Strain and serve warm.
