Ingredients
1 lb. Hamachi (yellowtail tuna) – 1/2” dice
Substitute your favorite fish or cooked shrimp
1/2 cup diced watermelon
1/8 cup diced red onion
1/8 cup sliced green onion
1/8 cup pickled cherry tomatoes
1/8 cup diced english cucumbers
1/8 cup diced pickled diakon radish
1/8 cup lime juice
Salt and pepper to taste
2 tbsp Sriracha Sauce
1 tbsp Soy Sauce
1 tbsp Rice Wine Vinegar
Togarashi – Japanese seven spice pepper

At Syringa we like to keep the ceviche fresh, and don’t soak the fish for too long as it “cooks” the fish. However if you are using shrimp marinate the shrimp longe- about 10 to 15 minutes.
Combine all ingredients in large bowl. Place in chilled serving dish. Use your favorite chip to dip.
