Crust:
1.5 cups of graham cracker crumbs
2 tablespoons granulated sugar
4.5 tablespoons melted unsalted butter
Filling:
32 ounces softened cream cheese
1 cup plus 2 tablespoons granulated sugar
2 tablespoons cornstarch
4 eggs
1 egg yolk
5 cups heavy cream
1.5 teaspoons vanilla extract
.5 cups Oreo crumbs
1 teaspoon lemon zest

Instructions:
Line the bottom of a 9 inch spring form pan with parchment paper
Add melted butter, sugar and graham cracker crumbs to a bowl and mix until incorporated, add to pan and evenly spread, bake for 15 minutes at 300 f. then let cool
with a whisk or a hand mixer whip cream cheese until smooth
add sugar, cornstarch, eggs, egg yolks, heavy cream, vanilla, and lemon zest one at a time mixing until fully incorporated each time scrape down bowl each time as well
fold in Oreo crumbs
Add filling to cooled pan and bake at 200f for 2 hours
After 2 hours turn oven off and do not open the oven door or remove cheese cake allow to cool fully about 5 hours. N
