Makes 2-4 servings.
- 2 medium ripe large avocados
- 4 small-medium eggs
- 2-4 oz spreadable cheese or soft goat cheese
- Fresh microgreens
- 2 Tbsp Everything Bagel seasoning (optional)
- Hot sauce of choice, to taste

Cut the avocados in half, lengthwise, and remove the pits. Sprinkle lightly with a little lime juice to prevent browning. Spread a small amount of the cheese in the bottom of the empty pit cavity. Set aside.
Bring a medium pot of water to a boil. Carefully drop in your eggs and simmer for 6-7 minutes. Move pot to the sink and peel under warm running water.
Place one warm egg on top of the cheese in each avocado. Sprinkle with seasoning and top with microgreens. Enjoy immediately or scoop out onto toast.
